Ingredients:
1 cup oatmeal
1 cup spelt, amaranth or kamut flour
1 cup organic cane sugar
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
½ cup semi sweet chocolate chips (or carob chips)
¾ cup Soya Garden Margarine (or butter)
1 egg
1 tsp vanilla
Directions:
Combine the following in a bowl and mix well
1 cup oatmeal
1 cup spelt, amaranth or kamut flour
1 cup organic cane sugar
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
Add 1/2 cup semi sweet chocolate chips* to dry ingredients. (* can substitute carob chips)
In a separate bowl, with electric mixer beat 3/4cup Soya Garden (or butter), then add 1 egg and 1 tsp. vanilla. Beat on medium speed until creamy.
Add dry ingredient mixture into butter mixture and combine.
Spoon out dough onto greased cookie sheet, approx. 1 tbsp. per cookie.
Bake at 375 degrees for 12-14 minutes. Remove and cool on a rack.
Makes approx. 28 cookies.
If needed, adjust butter (or substitute) and flour measurements to reach desired cookie density.
