Quick, Easy and Smells Delicious (not fishy!) 1 lb. fish fillets Try varying the flavour using:Grated fresh ginger, green onions and garlic for an Oriental flavour
Preheat oven to 400°F. Cut fish fillets into four pieces. Steam or microwave lettuce leaves until slightly wilted. In the centre of each leaf, place two slices of lemon, salt and pepper to taste, and your choice of herbs and spices. Place fish in the centre of the leaf (flesh side down on top of seasonings), and wrap it up. Place bundles in a lightly oiled baking dish and bake for about 15 minutes, or until fish flakes easily. You may discard the leaf, or serve the fish in the leaves for an attractive presentation. This easy, low-fat method of cooking results in moist, flavourful fish, without the smell of cooked fish in your home. Serve with wild rice, salad and your choice of vegetables for a healthy, elegant dinner. Serves four.

FishStudies show that people who eat fish several times per week are somewhat protected from heart disease. Fats in fish, called omega-3 fats, may help reduce blood clotting, lower cholesterol and improve the total fat profile in the blood, conferring some cardiovascular protection. Fish is an excellent source of protein, and tends to be lower in calories and easy to digest. This makes it an excellent choice as part of a healthy diet. However, there is a growing concern about heavy metals and other contaminants in fish. Large predatory fish such as swordfish, tuna and shark tend to be higher in these contaminants. Choose a variety of different fish for your meals, looking for wild harvested, smaller species that are not carnivorous.
